Cottage Cheese Mac and Cheese

Bring a pot of salted water to a boil. Add the [[elbow macaroni]] and cook until al dente, about 8 to 10 minutes.
Blend the [[cottage cheese, 2% or higher]], [[milk]], [[cheddar cheese, grated]], [[salted butter]], [[prepared mustard]], [[cornstarch]], [[garlic powder]], [[salt]], and [[ground black pepper]] until completely smooth.
Pour the sauce into a clean pot and cook over low to medium-low heat, stirring constantly, for about 5 minutes, until thickened. Do not let it boil.
Drain the pasta, add it to the sauce, and stir gently until coated. Serve immediately.
