Mini Baked Chicken Tacos

Heat the oven to 425°F. Arrange the [[street taco corn tortillas]] on one or two sheet pans and brush both sides lightly with the [[olive oil]].

Place a heaping tablespoon of [[cooked seasoned chicken breast, shredded]] and a heaping tablespoon of [[Colby Jack cheese, shredded]] on each tortilla.

Bake for 2 minutes to soften the tortillas and melt the cheese. Carefully fold each tortilla in half and press gently, then bake for another 12 to 15 minutes until crisp.

Serve with the [[sour cream]], [[salsa]], and [[fresh cilantro, chopped]].
