Sheet Pan Sausage and Vegetables

Heat the oven to 400°F and line a sheet pan with parchment.
Spread the [[smoked sausage, sliced]], [[yellow potatoes, cubed]], [[mushrooms, sliced]], [[mixed bell peppers, chopped]], and [[Brussels sprouts, halved]] in a single layer. Drizzle with the [[olive oil]].
Mix the [[garlic powder]], [[dried oregano]], [[paprika]], [[red pepper flakes]], [[kosher salt]], and [[black pepper]], then sprinkle over the pan and toss well.
Roast for 15 minutes, toss, and roast for another 10 minutes, until the vegetables are tender and the sausage edges are crisp. Finish with the [[fresh parsley, minced]].
